Anchovies with red and green sauce


Red sauce: put the tomato paste, passata, chilli pepper, salt, oil and bay leaf, chopped very finely, into a bowl. Mix everything well.

Green sauce: clean and dry the parsley and chop it very finely. Soak the bread in vinegar and then blend it. Put the parsley, breadcrumbs and crushed garlic, chopped hard-boiled eggs, mustard, salsa Rubra, salt, chilli, olive oil in a bowl and mix together.

Serve the sauces with rinsed anchovies in oil.


For red sauce:

  • Salted anchovies, olive oil.
  • 150g of tomato paste
  • 6 tablespoons of tomato puree
  • 3 bay leaves
  • salt
  • chilli
  • oil
For green sauce:
  • Salted anchovies, olive oil.
  • 1 bunch of parsley
  • 3 garlic cloves
  • 2 slices of breadcrumbs
  • 1 glass of red vinegar
  • salt
  • 2 eggs
  • chilli pepper
  • 2 tablespoons mustard
  • 2 tablespoons Rubra
  • olive oil
