BAKERY PRODUCTS TASTING WORKSHOP

BAKED GOODS TASTING WORKSHOP in MACRA Sunday, MAY 17, 2026

On the afternoon of Sunday, May 17 2026, starting at 5:45 PM, a Baked Goods Tasting Workshop will be held in Macra.

Following the walk with a visit to the mills and water-powered machines along the Bedale stream in Macra, the afternoon will conclude with a tasting of baked goods presented by the Alta Valle Maira Artisan Bakery of De Meio Alessio & C. s.a.s. from Prazzo.

The Alta Valle Maira Bakery represents artisan excellence in the production of baked goods and dry pastries.

The tasting will be preceded by an introduction to the main types of flour obtained from different cereals and their characteristics and properties.

Accompanied by the owner Alessio, an expert baker, participants will learn to use all five senses to distinguish the quality of flours, the complexity of aromas released by sourdough starter, and the consistency of the crust and crumb structure.

Participants will be guided through the analysis of the organoleptic profile of savory and sweet baked and leavened products, beginning with visual analysis, followed by olfactory examination and finally tasting.

The workshop will therefore be an opportunity to taste typical breads made with wheat flour, or wheat and rye, naturally leavened, and hand-stretched breadsticks.

Participants will also appreciate the various types of focaccia, as well as dry pastries made with different ingredients and derived from different baking methods.

The baked goods tasting workshop, held during the European Mills and Milling Heritage Days 2026, will take place at the INFOECOPOINT in Borgata Bedale, Piazza del Municipio in Macra and will begin at 5:45 PM.
